Sugar Free Gingerbread Cookies

This is gingerbread the way we like it: warm spices, crispy edges, chewy middles. All the cozy December feelings without your blood sugar going haywire.
They're gluten free and anti-inflammatory friendly. A holiday treat that works with your weight loss goals, not against them.

Either way, you're doing it right.
Ingredients for the cookies (makes about 14):
2 cups blanched almond flour
1 tsp baking powder
½ cup brown sugar sweetener substitute (allulose or monkfruit)
2 tsp gingerbread spice (or make your own, see notes)
1 large egg, room temperature
¼ cup butter, softened
1 tsp vanilla extract
Ingredients for the icing:
1 large egg white
½ tsp lemon juice
1½ cups powdered sweetener substitute
Instructions:
Whisk almond flour, baking powder, brown sugar substitute and gingerbread spice in a large bowl.
In a smaller bowl, mix the egg, softened butter, and vanilla until combined. Pour wet into dry and stir until a dough forms. Use your hands to knead it into a ball.
Wrap in plastic and refrigerate 45 minutes.
Preheat oven to 350°F. Line a baking sheet with parchment.
Roll dough between two sheets of parchment to about ¼ inch thick. Cut into shapes and place on baking sheet.
Bake 12-15 minutes until edges just begin to brown. Let cool completely before icing.
For icing: Whisk egg white and lemon juice together. Fold in powdered sweetener until thick. Pipe or drizzle onto cooled cookies.
Store in airtight container for up to a week!
*Note: No gingerbread spice? Make your own: mix 1 Tbsp ground ginger, 1½ tsp cinnamon, ½ tsp nutmeg, ½ tsp cloves, and ¼ tsp allspice. Store in a jar and use all season.
