Meet Coco Pierrel, Your Weight Loss Coach.
Coco Pierrel, The Healthy Weight Loss Coach, is an Integrative Nutritionist certified by the Institute for Integrative Nutrition (IIN) & The State University of New York (SUNY).
With expertise in nutrition coaching, gut health and over 100 dietary approaches—Keto, Paleo, Plant-based, Whole30, and more—Coco knows that lasting results come from learning how to nourish your body for the long term, not from restrictive diets.
This philosophy inspired the creation of Eat Shed Glow™, her signature weight loss method designed to help clients break-free from the endless cycle of dieting and achieve sustainable results.
Coco’s approach avoids calorie counting and deprivation. Instead, she empowers clients with clear, science-backed nutrition guidance, practical tools, accountability, and mindset support to change the way they eat for life.
Each client receives a personalized nutrition Roadmap tailored to their body, preferences, and lifestyle. Combined with Coco’s 1:1 coaching, this approach helps them reach their goals with confidence and maintain results after the program ends.
Coco’s Coaching Philosophy
“Diets are B.S.”
If you've landed on this page, you're likely familiar with the struggle. You've probably tried countless diets, tracked points and macros, lost some weight, gained it back, blamed your willpower, and felt deprived, frustrated, or guilty - while still feeling confused about nutrition.
I’m here to reassure you that weight loss isn’t complicated. It’s been marketed that way, pushing us to buy into quick fixes instead of addressing the root issue which is learning how to properly nourish our bodies for the long-term.
I founded Eat Shed Glow™ to equip you with practical tools, empowering you to make informed decisions about your nutrition and achieve lasting weight loss. This approach ensures you can enjoy life while creating a healthy future.
Once you understand how to feel and look your best, there’s no turning back—and no injection can give you that (yes, looking at you, Ozempic!).

Coco’s Journey to Nutrition
FASHION AND THE CITY
Coco moved from Beirut to NYC in 2008 to pursue a career in fashion, graduating from Parsons and working at top companies before launching her own venture, COCOBOUCHE—a hub for vintage designer costume jewelry. Life was thriving, she got married, was living in the city of her dreams and welcomed her daughter, Lola, in 2013. Shortly after, everything changed. Coco was diagnosed with acute thyroiditis, followed by migraines, peri-oral dermatitis, rosacea, and a debilitating, unexplained back pain that lingered for four years. Despite living what she thought was a "clean" (aka restrictive) and active (aka cardio junkie) lifestyle, her body was failing her and no medication, treatment or diagnosis would make her feel any better.
THE JOURNEY TO FIND ANSWERS
Determined to reclaim her health after repeated disappointments with the medical system, Coco turned to functional nutrition and neuroscience for answers (forever grateful for “The Way Out” by Alan Gordon). She healed her relationship with food by learning how to properly fuel her body and made key lifestyle changes to reduce anxiety and confront past trauma. The results were profound—her body healed, her energy soared, and, as a bonus, she shed the stubborn weight that inflammation and stress had held onto for years with so much ease. She quickly realized that what she thought was clean eating and being active, was based off toxic dieting behaviors she had accumulated over time and were clearly not a sustainable nor a happy way to live.
A NEWFOUND PURPOSE
This transformative experience ignited a newfound purpose in Coco, inspiring her to pursue a coaching career in Integrative Nutrition. Today, she is dedicated to empowering others on their health journeys with a sustainable, balanced approach to weight loss. She believes everyone deserves the knowledge to live a healthier life in a vibrant body they feel confident in—martinis and French fries included!
Coco currently lives in Connecticut with her family and two puppies, though New York City will always be home.
